Before completing the game, you can only change skins in the challenge rooms, after completing the game you have the chance to pick your Batman skin before loading your normal game or new game plus. Edit: You can change skins before completing the game by entering this cheat code, I don't know if disables achievements/trophies or not, though.

In there you will find 'MouseSensitivity=30.0' and 'bEnableMouseSmoothing=true' , change the former's value to 10-15 ( suitable for me mouse), and the latter to 'False'.

Now, here's what happens if you activate the Battle Mode while driving the Batmobile. Set Battle Mode Toggle to on to switch between car modes using R1, brake/reverse then switches to L2 automatically.

Then, here's how you choose your customes before going into the action. Select Showcases in the Main Menu and switch to the character / skins tab. Here you can press backspace to set your active costume.

At The Main Menu go through the cumbersome process from 'Press Start Button to Select Save Files'.
Now Scroll Down To The 'Showcase' Tab
Press R1 on PS4 (Right Bumper on Xbox One) until you get Batman Skins
Scrolls or Select the skin you want to use
Press Square Button (X on Xbox One)
That's It All Done
